According to a recent article in Gizmag (www.gizmag.com), a team of researchers including the USDA (United States Department of Agriculture), the Agricultural Research Service and the University of Florida, tomato farmers can perfume a step at their farms to help maintain the just-picked freshness of tomatoes.
Instead of sending green tomatoes straight to a chiller and then for transport where it ripens enroute, a hot water bath followed by a cool water bath will ensure the tomatoes continue to taste farm fresh when it reaches the consumer’s plate.
